Do you ever feel like being on a diet just doesn't give you a filling meal? Well cauliflower rice is here to save the day! It's like eating a bowl of rice, only hardly any calories! It's also quick and easy to prepare - the perfect substitute for a filling meal! So put down the high carb fillers and prep a fresh and healthy meal to enjoy for lunch or dinner.
Step 1 - Add 5g Olive Oil to a pan on high heat.
Step 2 - Dice the whole Onion, adding to the Pan. Stir and cook through until Onion is browning.
Step 3 - Add the 500g Lean Beef Mince to the Pan. Stir thoroughly to mix and cook Beef to brown.
Step 4 - Add the Salt Reduced Taco Seasoning, combining and stiring through to ensure an even consistency. Set aside once cooked.
Step 5 - Setup a food processor. Add Chopped Cauliflower heads to food processor in batches as necessary and turn on to blend and create Caulifower rice.
To make the best rice, ensure the Cauliflower heads are chopped to an even size and aren't processed for too long.
Step 6 - Add 5g Olive Oil to a Pan on high heat. Pour Cauliflower rice into Pan and mix.
Step 7 - Add 2 teaspoons of Garlic Powder and 2 teaspoons of Cumin to the Cauliflower Rice and stir through.
Step 8 - Add 400g Black Beans to the Pan and stir thoroughly with the Cauliflower rice.
Keep the Cauliflower and Beans firm and make sure not to cook for too long.
Step 9 - Serve Cauliflower Rice, Beans and Beef Mince evenly into 4 containers, adding Spinach and Cherry Tomatoes to finish.
