GLUTEN FREE SUPREME PIZZA (WITH MACROS)

One of the benefits of flexible dieting is still being able to eat some naughty foods and hitting your goals. Well, now you don't have to count one of your favourite treats as 'naughty food', with this all natural, all healthy-fat, Gluten Free Supreme Pizza!

Make the base at home using Almond Meal instead of traditional flour, to get that really fresh and natural taste, and stack it with all the ingredients and toppings you love!

Ingredients:

  • 200g Almond Meal
  • 2 large Eggs
  • 2 tablespoons of Coconut Oil
  • 1 teaspoon of Table Salt
  • 2 tablespoons of Tomato Paste
  • 50g Light Mozarella Cheese
  • 150g Cooked Chicken Breast
  • 1/2 diced Green Capsicum
  • 2 tablespoons of sliced Black Olives
  • 1/3 cup of sliced Mushrooms
  • 1 Tomato
  • 2 teaspoons of Mixed Dried Herbs

Instructions:

Pizza Base

Step 1 - Add 200g of Almond Meal, 2 Large Eggs, 2 tablespoons of Coconut Oil and a teaspoon of Table Salt to a large bowl. 

Step 2 - Combine the first 4 ingredients for around 30 seconds using a spoon and your hands, or until the dough has a consistent and solid mix. 

Step 3 - Prepare a pizza tray with a sheet of oiled baking paper over the top. Transfer the dough to the pizza tray and flatten. 

Step 4 - Using a second sheet of baking paper, lay it over the top of the dough and press down firmly to spread the base over the tray.

Start pressing from the centre and out toward the edges to ensure an even thickness. 

Step 5 - Peel off the top baking paper sheet, and fold the edges of the base over by about 2 centimetres to create a crust around the edges. 

Step 6 - Bake the base in the oven on 180 degrees Celsius for 15 minutes.

Pizza Toppings

Step 7 - Take the base out of the oven and spread 2 tablespoons of Tomato Paste evenly. 

Step 8 - Sprinkle 25g of Light Mozarella Cheese over the base.

Step 9 - Add the diced Capsicum, sliced Olives, sliced Mushrooms and Tomato slices to the pizza. 

Step 10 - Finish off by sprinkling the remaining 25g of Light Mozarella Cheese over the top followed by 2 teaspoons of Mixed Dried Herbs. 

Step 11 - Bake in the oven again for 15-20 minutes.

Step 12 - Enjoy the Pizza warm or cold, for dinner or lunch. The perfect on-the-go meal that's Gluten Free and full of healthy fats.
