It's winter, you've had a long day out and the sun is setting early - but you still need to prepare your food! Well, don't worry because we've got the perfect little gift for you. Feast your eyes upon this Quinoa Cashew Chicken Bake.
All made in one dish, it's easy to cook, quick to clean and gives you more time to sit back and enjoy your night before another big day. Side note, it also tastes great and gives you everything you need to be at the top of your game.
This will be your new winter favourite!
Step 1 - Slice up 600g of Chicken Breast, 2 red capsicums and 2 brown onions.
Step 2 - Add 1/2 cup of Hoisin Sauce, 1 tablespoon of Minced Garlic, 1/2 tablespoon of Minced Ginger, 2 tablespoons of Soy Sauce and 1 cup of Water to a large bowl.
Stir the sauce mixture thoroughly.
Step 3 - Spray a medium sized baking dish with coconut oil.
Step 4 - Add 1 cup of Uncooked White Quinoa Grain to the bottom of the baking dish in an even layer.
Step 5 - Place the vegetables, Red Capsicum followed by Brown Onions, into layers on top of the Quinoa.
Step 6 - Place the sliced Chicken Breast over the top of the vegetables in an even layer.
Step 7 - Pour the Sauce Mix over the baking dish, coating all of the Chicken.
Press firmly down with a spoon to compact the ingredients.
Step 8 - Place in the oven at 190°C for 60 minutes.
Step 9 - Once out of the oven, garnish with sliced Spring Onion and add 200g of Roasted Cashew Nuts on top of the Chicken Bake.
Step 10 - Divide Chicken Bake into 6 even servings and store in the fridge for several days and eat for Dinner or Lunch.
