TURKEY QUINOA MEATLOAF MUFFINS (WITH MACROS)

Cheese, salsa and more cheese, can't be healthy right?  Wrong! Check out this awesome meatloaf muffins recipe that incorporates tonnes of cheese with salsa, turkey mince, quinoa and the right mix of spices that will have your taste buds on edge! 

The addiction is real, and you can have these for a snack or a full meal by just incorporating a side of veggies of salad. Plenty of protein, the right carbs and low in fat. Easy to make so you can sit back and relax while waiting for these red and gold beauties to come out of the oven!

 

Ingredients:

  • 1/3 cup uncooked White Quinoa 
  • 500g Turkey Mince
  • 3/4 cup of Tomato Salsa
  • 2/3 cup of Light Shredded Cheese
  • 2 Egg Whites and 1 Egg Yolk
  • 1 diced Red Capsicum
  • 1 chopped Brown Onion
  • 1 teaspoon of Olive Oil
  • 1/3 cup of finely chopped Parsley
  • 1 teaspoon of Oregano
  • 1 teaspoon of Cumin
  • 1 teaspoon of Chilli Flakes
  • 2 teaspoons of Minced Garlic

Instructions:

Step 1 - Add 1/3 cup of uncooked White Quinoa to a pot with 2/3 cup of Water. Bring to the boil and then turn down the heat to simmer for 15 minutes. Drain any excess water from the pan.

Step 2 - Add the cooked Quinoa to a large bowl, followed by 1 diced Rep Capsicum, 1 chopped Brown Onion, 1 teaspoon of Olive Oil, 1/3 cup of finely chopped Parsley, 1 teaspoon of Oregano, 1 teaspoon of Cumin, 1 teaspoon of Chilli Flakes, 2 teaspoons of Minced Garlic and 1/3 cup of Tomato Salsa (save the rest for later!).

Step 3 - Combine all ingredients in the large bowl well until evenly mixed. 

Step 4 - Add 500g Turkey Mince (Chicken is also great!), 1/3 cup of Light Shredded Cheese and 2 Egg Whites and 1 Egg Yolk.

Mix well until full combined, using your hands is the easiest way here!

Step 5 - Spray a 12 cup muffin tray with Coconut Oil to avoid sticking. 

Step 6 - Use a spoon to evenly place the muffin mix into the 12 cups, using any leftovers to top up. 

Step 7 - Place in the oven (pre-heated of course!) for 30 minutes at 180°C.

Step 8 - Remove from the oven and add the remaining Tomato Salsa to the top of each muffin, followed by 1/3 cup of Light Shredded Cheese divided evenly. 

Step 9 - Place back in the oven to cook for a further 5 minutes. 

Step 10 - Remove from the oven, let cool and use a spoon to pry out the muffins ready to eat! 2 make a great snack, or combine with a side of veggies for a full meal.
