It's summer and it's stinking hot. Need something to cool you down, that tastes great and stays within your diet restrictions? These awesome mini Strawberry Cheesecake Popsicles are the best Summer sweet snack out there! Combine the sweetness of strawberries with the tangy flavours or greek yoghurt and cream cheese, combined with a biscuit crunch and the health benefits of flax seed - all in one snack!
Stay cool and impress your guests with the best frozen protein snack around. Don't forget to make multiple batches and store them in the freezer so you can sit back and relax in the shade. This is literally the tastiest healthy snack you will ever taste, and the calories are low with around half coming from protein and a balance between carbs and fats. Get on it!
Step 1 - Add 1/4 cup Wheat Biscuits to a mixing bowl. Crush biscuits until fine crumbs. Add in 1/4 cup Flax Seed Meal to the bowl with 2 tablespoons Coconut Oil. Mix well until the base mixture is fully soaked.
Step 2 - Add 250g Light Cream Cheese, 1 1/2 scoops of Strawberry Protein, 1/3 cup low fat Greek Yoghurt and 1/3 cup Almond Milk to a food processor or blender.
Combine for several minutes until consistently smooth and thick.
Step 3 - Spoon the cheesecake mix evenly into 6 plastic cups or popsicle moulds, leaving a minimum 2cm gap to the top of the cup.
Step 4 - Add the base mixture to the cups, pressing down firmly with a spoon to compact and assist the cheesecake sticking to the crumb base.
Step 5 - Insert a popsicle stick into each of the cups.
Step 6 - Place all cups in the freezer for at least 5 hours, with best results freezing overnight.
Step 7 - Enjoy!
