Don't complicate your Meal Prep! Oven Baked Chicken couldn't be any easier with this quick and easy lunch and dinner idea! Tender and Juicy baked chicken with a tasty seasoning mix combining sweet brown sugar with earthy and spicy Oregano and Paprika which just caramelises to perfection!
Step 1 - Cut up 1/2 Red Onion and 150g Fetta Cheese into small pieces.
Step 2 - In a small bowl, combine 1 1/2 tablespoons of Brown Sugar, 1 teaspoon of Paprika, 1 teaspoon of Oregano, 1/4 teaspoon of Garlic Powder, Salt and Pepper.
Use a spoon to mix the sugar, spices and herbs together well.
Step 3 - Cut up 750g of Chicken Breast into medium sized pieces.
Line a tray with aluminium foil and spray with Coconut Oil before placing down the Chicken Breast pieces, evenly spaced.
Step 4 - Cover the Chicken Breast pieces with Olive Oil, using your fingers to spread completely. Coat the Chicken with the Sugar Spice seasoning mix, using roughly half of the mix.
Step 5 - Turn over the Chicken pieces, and repeat the process of applying Olive Oil and spreading Sugar Spice coating over the top.
Step 6 - Place in the oven for 20 minutes at 200 degrees Celsius.
Step 7 - Remove from the oven and leave to cool before serving with a Salad of Green Leaves, Red Onion, 2 Tomatoes and 30g Fetta cheese for each serving.
Step 8 - Enjoy!
This recipe makes 5 servings, with a low fat, medium carb and high protein finish.
