PROTEIN COOKIES - PROTEIN GINGERBREAD MEN

So it's almost Christmas time again, doesn't time fly! While we are all busy running around the shopping centre (or trawling through online websites) for the perfect gifts, we sometimes forget about the perfect food!

Well you don't have to worry, because these Protein Gingerbread Men are the easiest Christmas treat you'll ever make, and they're less than 100 calories per serve. So sit tight and learn how to wow your guests this Christmas season with some sweet, sweet baking!

 

PROTEIN GINGERBREAD MEN

Ingredients:

  • 2/3 cup Almond Meal
  • 1 1/2 scoops Vanilla Protein Powder
  • 1 large Egg
  • 2 tablespoons Natural Sweetener
  • 1/8 cup Molasses
  • 1 tablespoon Coconut Oil
  • 1/2 teaspoon Corn Starch
  • 1/8 teaspoon Baking Powder
  • 1 teaspoon Ginger
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Cinnamon
  • pinch of Ground Cloves
  • pinch of Nutmeg
  • pinch of Salt

Instructions:

Step 1 - Add 2/3 cup Almond Meal, 1 1/2 scoops Vanilla Protein Powder and 2 tablespoons Natural Sweetener. Mix together until consistent. 

Step 2 - Add in 1/2 teaspoon Corn Starch, 1/8 teaspoon Baking Powder, 1 teaspoon Ginger, 1/4 Cinnamon, 1 teaspoon Vanilla Extract, pinch of Ground Cloves, Nutmeg and Salt. 

Mix once more, until all dry ingredients are evenly spread.

Step 3 - In a second bowl, add in the wet ingredients including 1 tablespoon melted Coconut Oil, 1 large Egg and 1/8 cup Molasses. Mix until well combined. 

Step 4 - Pour the mixed wet ingredients into the bowl of dry ingredients. Combine well with electric beater until a dough is formed. 

Cover the dough with plastic wrap and refrigerate for 1 hour. 

Step 5 - Place the dough on the bench and use a rolling pin to spread the dough until roughly between 0.5cm-1cm thick. Use a cookie cutter to cut out 10 Gingerbread Men, rerolling and cutting left over dough as necessary. 

Step 6 - Place the men on a baking tray and bake in the oven for 10 minutes at 160 degrees Celsius. 

Step 7 - Leave the cookies to cool for 2 hours before removing from the trays and serving. 

Add icing sugar or decorations as desired (not included in macros).

Step 9 - Enjoy!

Macros:

This recipe makes 10 servings, although feel free to make some more and add extra cookies for all of your family and friends to enjoy!
